Hot from the oven cheesecake pie

This is a simple cheesecake pie, that can be prepared in about an hour. Served hot from the oven is very tasty.

Ingredients:
1000 grams sweet cheese
50 grams of cream
5 eggs
150 grams of sugar (5 spoons)
150 grams of raisins
vanilla essence - one small bottle or 1 vanilla sugar pack

1 large pack of simple biscuits
250 ml milk (one large glass)

This recipe is very easy since you do not need to have all the ingredients and the quantities can vary a lot, depending on what you have available, without any consequences.

Step 1
The sweet cheese needs to be dried of any whey. Put the cheese on a sieve or on a strainer for 30 minutes, until it stops dripping.
While this is not mandatory, if you skip this step, the cheesecake will have a little sour taste.






Step 2
Prepare the tray and the base for the cheesecake, while the cheese is drying out. Put a baking paper in the tray. Than dip the biscuits in milk and lay them in the tray, one at a time. Don't mind the small gaps between them. You need to create a bottom and outer layer of biscuits dipped in milk. 
This is the easiest and tastiest way to create a cookie base without making any dough








Step 3
Mix all ingredients together. Mix the cheese, with the eggs, the cream and with the sugar first. The leftover milk from the dipped biscuits can be added here. You will get a flowing pasta. Add the essence and the raisins.

As I was left some biscuits from the pack, I have crushed them and added them in the cheese pasta. This is completley optional.
































Step 4
Pour the cheese pasta in the tray on top of the biscuits. Do not mind if it is not uniform or if the side biscuits are not covered with cheese. (see the first picture)

Step 5 
Put the tray in the oven for 45 minutes

Notes: you can have anywhere between 800 and 1000 grams of sweet cheese. The cream is not mandatory. Except for vanilla and rum I do not recommend any other essences (somebody tried oranges and it was not that great).

The beginning

For 28 years I have almost never set foot in the kitchen. Well of course some of those 28 years I couldn't have possible do this literally, but I think you get the picture. I love literature, movies and sweets. For the first two of my hobbies there was no problem in enjoying them without much restriction. Only the sweets were a little problematic. Either I could not find the required quality in commerce, either the price was unjustified. So for years I have balanced between buying the good stuff and the affordable stuff. 

Visiting some of my friends in 2012, I was served with a very good hot-from-the-oven-cheesecake-pie. It was love at first sight and it was obvious I could not get hot-from-the-oven-cheesecake-pie from buying from a store. So I have asked how they do it and I was told that it was very simple. You just mix everything together, in no particular order, without much regards to the quantities and throw them in the oven. 
Challenge accepted! And so the very first thing I have cooked was a hot-from-the-oven-cheesecake-pie. 

From here on I hope to delight you with simple things that can be prepared and that are a lot better than what you can buy from a store.
